Pineapple Guacamole

I had a little leftover crushed pineapple from my pork al pastor and an avocado that was overdue to be eaten.  By combining these two with some savory flavorings, I made a sweet healthy fat side dish to complement the pork.  The below proportions made two servings of a solid scoop each, but scale up if you’re thinking this will be a dip or appetizer for a group.

What you’ll need:

  • A small amount of pineapple, crushed or diced small (the flavor is strong and sweet)
  • 1 avocado
  • Handful of chopped red onion
  • Handful of cilantro, diced or ripped into small pieces
  • splashes of lemon and lime juice
  • To taste: salt, paprika, chili powder, red chili flakes


  • Mash the avocado in a bowl
  • Add the rest of the ingredients in proportions that suit your taste buds, mix and you’re ready to go
