Simple Cucumber Salad

As an easy side to pair with my Whole 30 falafel, I made a simple cucumber salad that was light and fresh and took no time at all. One cucumber served two.

What you’ll need:

  • 1 cucumber, peeled and cut into chunks for your liking
  • White onion, chopped – just a small handful or two, depending on how oniony you like it
  • 2 splashes of apple cider vinegar
  • Fresh dill, minced small


  • Prepare the cucumber and throw in a bowl
  • Add white onion in a proportion that feels good to you
  • Splash with apple cider vinegar
  • Mince or use your nails to rip up fresh dill into small pieces so it coats your salad
  • Taste and adjust as needed
