Roasted Carrots with Cumin & Dill

Roasted carrots are an easy side dish that make for great leftovers. They’re hearty and can be seasoned in a variety of ways to complement your entree.

What you’ll need:

  • Carrots, peeled and cut into 2-3 inch pieces, cut in half to be thinner so carrots cook evenly as need
  • Cumin, light sprinkling
  • Dill, chopped, light sprinkling
  • Olive oil


  • Preheat oven to 400F and line baking sheet with tin foil
  • Place carrots on baking sheet, coat lightly in olive oil, mix around, and spread carrots out somewhat evenly
  • Lightly sprinkle with a few pinches of cumin
  • Lightly sprinkle with fresh chopped dill
  • Mix around if the seasoning feels un-even and re-spread out
  • Cook for ~20 minutes, until tender
  • To taste, consider some extra dill and/or salt
