Balsamic Chicken & Snow Peas: Whole 30 Day 18

I wanted to try yesterday’s chicken recipe from Nom Nom Paleo a second time, this time with drumsticks, a longer marinade, and adding a veggie to the mix.  The drumsticks still didn’t crisp up (because I still don’t have a broiler), but if you can do that for a few minutes at the end, definitely do! The recipe linked above has way more info and context and in-progress photos, check it out.

What you’ll need:

  • Marinade
    • 2 shallots, chopped
    • 3 green onions, chopped
    • 4 tbsp balsamic vinegar
    • 4 tbsp olive oil
    • 2 tbsp coconut aminos
    • Pinch of salt
  • Chicken drumsticks (my package came with 6)
  • Snow peas, ends cut off  (3-4 servings worth)

Instructions: 

  • In a large bowl, throw in all the ingredients for the marinade and stir around
  • Add drumsticks and submerge them into the marinade, getting it all over
  • Cover and let sit for several hours (I’ve done 1 hour before, this time I did 10 hours while at work, didn’t make too much of a difference)
  • When ready to cook, preheat oven to 400F (non-convection. If convection, 375)
  • Line a baking pan with some depth to it (so it can hold the juices) with some tin foil and place drumsticks in a single layer, and add all marinade to the disk
  • Bake for 20 minutes
  • Take out and flip drumsticks to the other side, bake another 10 minutes
  • Take out and add snowpeas around the chicken (not right on top, but on the sides). Mix into the sauce so they’ll get immersed the flavor.
  • Bake for another 10 minutes
  • Take out, make sure the chicken is cooked all the way through and that the snow peas are cooked to your liking – feel free to give them another 5 minutes or so if they need it
