Every now and then on the Whole 30 I just can’t bring myself to eat another meat-centered meal. After a seriously fascinating but long day at Jury Duty, cooking a meal was not on the agenda.
Smoothies are technically allowed on Whole 30, but not encouraged, as they want you to chew your food and not sugar overload. But, oh well. This smoothie is mostly veggies and packed with nutrients, so I don’t feel guilty. Do you know what ingredient gives this baby that delectable tar color?
What you’ll need:
- 1 cup of orange juice
- Generous handful of kale
- 12 baby carrots
- 1 cup of shredded beets (mine were frozen)
- 1 frozen acai package (pictured here) or a handful or two of frozen strawberries
- Spoonful of spirulina powder
- Use yo’ blender and top with a fancy straw to feel extra cool
It’s the spirulina that makes this look like mud. If you don’t have it, skip it, and you’ll get a nicer color and the taste will stay the same, but you won’t get the extra nutrients from this superfood – protein, vitamin A, iron, vitamin B12, and more. Mine is from Terrasoul.
