We had a holiday dinner party and wanted an easy-to-make dish that could feed a group with limited mess and cost. Enter, meatloaf. My vision was basically a giant Italian meatball. I found a recipe by Whitney Bond and mixed it with some tips from my brother, and out came the beauty pictured above (never said I was a photographer…)
What you’ll need:
- small red onion, diced
- 2 cloves of garlic, minced
- 1 lb ground beef
- 2 pieces of gluten free bread, crusts removed
- Tomato basil sauce
- 1/2 cup ricotta cheese
- Parmesan cheese
- Preheat oven to 375F
- Mix some tomato sauce with the bread until it forms a mushy paste. Mix that with the onion, garlic, beef, ricotta and a bit of Parmesan cheese and press into a loaf pan.
- Bake for 25 minutes
- Remove from oven and drain the juices. The loaf shrank a bit, that’s okay. Spread some tomato sauce on top and another sprinkle of Parmesan cheese and bake for another 15 minutes.
Slice, serve and help meatloaf on its journey to redeem its reputation.
